INGREDIENTS:
Wet ingredients:
2 Eggs
1 cup Low-Fat or Skimmed Milk
1 cup Low-Fat Plain Yoghurt
5ml Vanilla Essence
20g Sugar-Free, Salt-Free Peanut Butter
Dry ingredients:
2 tsp Baking Powder
1/4 tsp Salt
1 cup FUTURELIFE® Smart food™ Peanut Butter Flavour
1 cup Wheat Bran
1 serving of a Non-Nutritive Sweetener (optional)
METHOD:
- Place all the wet ingredients into a blender and blend for 30 seconds or until the peanut butter is properly mixed into the wet ingredients.
- Place all the dry ingredients in a separate bowl.
- Then add the wet ingredients into the dry ingredients and combine with a spatula.
- Heat a non-stick pan on medium heat, then place flapjack sized portions of the mixture in the pan and let cook until bubbles start to show on the surface before flipping. Tip: they may take slightly longer to cook than other flapjacks.
- Serve as is or enjoy with some melted sugar-free, salt-free peanut butter or diabetes friendly jam.
VARIATIONS:
The mixture can be made as muffins too - makes 12 muffins.- Preheat oven to 180°C.
- Grease a muffin tray and evenly distribute the mixture, then bake for 12 - 15 minutes.
- When a toothpick comes out clean, remove from oven and set aside to cool.
- ENJOY!
Makes 18-20 flapjacks
