INGREDIENTS:
2 cups FUTURELIFE® Smart Instant Oats with Ancient Grains Original Flavour
1 tsp Baking powder
1 tsp Cinnamon
½ tsp Fresh ginger
¼ tsp Salt
1 ¾ cups Almond milk
2 Eggs
⅓ cup Pure maple syrup
2 tsp Pure vanilla extract
¾ cup Carrots, shredded
½ cup Raisins
½ cup Chopped pecans
To serve: Creme Fraiche and raspberry sauce
METHOD:
- Preheat the oven to 180°C, then grease a deep tart pan or a casserole dish with cooking spray.
- In a large bowl, mix together oats, baking powder, cinnamon, ginger and salt.
- In a medium bowl, stir together the almond milk, eggs, maple syrup and vanilla.
- Add carrots and half of both the raisins and pecans to the dry mix and mix well.
- Then add the wet mixture to the dry mixture and mix until well combined.
- Pour the mixture into the baking dish and even out using the back of your wooden spoon, or spatula, then sprinkle the rest of the raisins and pecans on top.
- Bake for 40 - 45 minutes, until lightly golden brown or a toothpick comes out clean.
- Set aside to cool for 5 minutes before serving.
- Serve with a spoon of crème fraîche and a drizzle of raspberry sauce.
