Diabetic Friendly FUTURELIFE® ZERO Zucchini & Walnut Bread

INGREDIENTS:

1 cup FUTURELIFE® ZERO Smart food™

½ cup Cake flour

1 ½ tsp Baking powder

2 eggs

200 g zucchini, finely grated

50 g Walnuts, chopped

2 TBSP Canola oil

½ tsp Vanilla essence

300ml Water

 

METHOD:

1. Preheat the oven to 180 degrees Celsius.

2. In a bowl, whisk the eggs until thoroughly combined, then incorporate the grated zucchini, chopped walnuts, vanilla essence and canola oil into the egg mixture.

3. Add the FUTURELIFE® Zero, flour and the baking powder and mix until just combined.

4. Add water to form a batter - it should be thick and sticky - adjust the consistency by adding more water if needed.

5. Spoon the batter into a greased, medium-sized bread pan (around 28 x 18cm).

6. Bake for 40-45 minutes. To check for doneness, insert a skewer – it should come out clean when the bread is ready.

Set side to cool in the pan before removing and slicing it.

Optional - serve with low fat cottage cheese or mozzarella.

 

Recommended serving size for a snack: 1 slice
