FUTURELIFE® SPRING ROCKET SALAD

INGREDIENTS:

For the salad:

 

For the vinaigrette:

  • 3 TBSP Olive oil

  • 1 TBSP Apple cider vinegar (or white wine vinegar)

  • 1 TBSP Honey

  • 1 tsp Dijon mustard

  • Salt and pepper to taste

 

METHOD:

  1. In a small bowl or jar, whisk together the olive oil, vinegar, honey, Dijon mustard, salt and pepper until smooth and well combined. Taste and adjust seasoning if needed.

  2. In a large bowl, add the rocket leaves, then gently toss in the sliced strawberries and avocado.

  3. Add small spoonfuls of cottage cheese evenly across the salad.

  4. Sprinkle over the toasted pumpkin seeds and FUTURELIFE® Granola Crunch Zero for that perfect texture.

  5. Drizzle the honey mustard vinaigrette over the top, finishing with a light drizzle of honey for extra shine and sweetness.

  6. Toss gently just before serving so all the flavours and textures combine beautifully.
