Banana and Carrot Cinnamuffins

INGREDIENTS

  • 1 cup flour
  • 1 cup FUTURELIFE® Smart Oats® and ancient grains (honey or original flavour)
  • 1 teaspoon bicarb
  • 1 1⁄2 teaspoons baking powder
  • 1 tablespoon cinnamon
  • 1⁄4 cup sugar
  • 50ml honey
  • 1⁄4 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 eggs
  • 1⁄2 cup milk
  • 1⁄2 cup shredded carrot
  • 1⁄2 cup shredded apple
  • 4 small very ripe bananas
  • Handful of dried cranberries

DIRECTIONS

  1. Mix first four dry ingredient together in a small bowl.
  2. Blend bananas, oil, sugars, eggs, milk, and vanilla
  3. Add the wet mixture to the dry mixture until well combined.
  4. Add apple, carrot and cranberries to mixture.
  5. Divide into 12 in a greased muffin pan
  6. Bake at 190°C for 18 minutes or until dry in the middle.
